Our process from roast to door

Coffee needs time after roasting to develop its full flavor. Our hardworking, one-way valve bags allow your coffee to off-gas during transit without absorbing any unwanted scents. This means that when it arrives at your doorstep, it’s either about to hit—or has just entered—its peak flavor window. Shipping typically takes about 5 business days.

You’ll receive a tracking number as soon as your order ships, so you’ll always know what’s happening.

Once your payment clears, your order is added to our queue. We roast coffee fresh the next business day. Our team starts bright and early, so if you need to make any changes, it’s important to reach out right away.

The best way to contact us is through the chat feature on our website—it connects you directly with our team. Emails sent later in the afternoon might not be seen in time.

Please note: Once your order is ready to ship, it cannot be modified or canceled.

About the Region:

Located in the western region of Guatemala, it is known for the Sierra de los Cuchumatanes mountains which are the highest non-volcanic range in Central America. The landscape is accented with an abundance of rivers and streams. Some notable ones being the Ixcán, Nentón, and Selegua Rivers. Another beauty of this region is the lake Laguna Brava, which has been inhabited by Mayan communities of the Chuj ethnicity since the 19th century.

Tasting Notes:

Flavor: Sweet with tones of Nougat and Brown Sugar

🌿 Body: Medium and satisfying

🍋 Acidity: Medium that finishes like a fine wine

👃 Aroma: A mix of lemon and lime with a touch of sweetness

Growing Conditions:

The region experiences dry, hot winds and has low humidity with a relatively predictable climate. These cherries grow in clay mineral soil which provides a unique flavor profile that is complex and sweet, with a touch of fruitiness. On average, the coffee is cultivated on two-acre plots of family-owned farms intercropped with corn and beans. The 400 individual farms that produce our coffee have very little infrastructure to process their own cherries so they partner with an export company, Unitrade Coffee. Along with a centrally located wet mill in Huehuetenango where producers can deliver and process their cherries, Unitrade also improves their access to international markets and established a non-profit called CoffeeCare for sustainability efforts.
